Ample and savoury, this wine, with its barely perceptible acidity, asserts a distinctly unique style within the realm of the finest southern white wines. Temperatures and precipitations

The first three months of 2023 were drier than usual. April and June were wet months, while May was dry and mild. July, August, and September were dry, with record temperatures in July, which was particularly sweltering. September, being dry and mild, ensured a perfectly favourable end to the ripening process for the quality of the grapes.

Vinification and ageing

The vinification process here is traditional, involving an extended maturation in oak barrels for approximately 10 months. A true artisan's effort is applied in the vineyard, with yields rarely exceeding 20 hl/ha. The fundamental principles of vinification at Mara Wine are based on maintaining the grapes at cool temperatures, pure plot-based vinification, indigenous yeasts (selected from the estate), and gentle extraction. The manual harvest is carried out in crates at dawn to take advantage of the nocturnal temperature drop. With the winery located at the heart of the vineyard, transportation time is minimal. The finest free-run juices are subsequently selected. Before fermentation at low temperatures, a 24-hour cold settling is performed at controlled temperatures between 8 and 10°C. There is no malolactic fermentation for this wine, which is neither fined nor filtered. The Florfina benefits from the natural flavour enhancers that are the micro-pulps of grapes, which elevate this Chardonnay with a floral note and an enchanting reflection.

Vine Cycle

The budburst in 2023 occurred on 11 April, which is average for Chardonnay. Mid-flowering was noted on 28 May. The relatively dry conditions did not impair the quality of the flowering, which proved to be complete and clustered. Veraison took place between 30 July and 08 August, depending on the grape varieties. The extreme dryness during the summer months encouraged an early halt to growth. The dry summer weather and the lovely Indian summer allowed for excellent ripening, enabling us to harvest each plot at its optimal maturity. The health status of the grapes was extremely satisfactory.

The tasting

The appearance of this non-fined, non-filtered Florfina 2023, with its yellow-green reflections, clearly reflects the wine's youthful character. From the first nosing, floral notes dominate, with hints of immortelle, dried flowers, and struck flint. With aeration, the wine reveals its full complexity with mineral undertones. Herbal notes such as sage and rosemary intertwine with fresh floral hints of acacia, lilac, and vine blossom. The initial taste is smooth, showcasing the wine's finesse. The mid-palate is elegant and refined, with volume and sweetness perfectly balanced by crisp, fresh acidity. The aromatic finish fully expresses the wine's complexity with white-fleshed fruit notes (peach, pear). Its long, rich finish is extended by delightful bitters.
